Robin and Aneeta Akhurst founded Apsara Cellars over a shared passion for the environment, studying biology and environmental science. They met in Indonesia over 20 years ago and began honing in on preserving nature with organic, biodynamic, and sustainable practices. The word “apsara” originates from the Sanskrit language and translates to an angelic dancer with balance, purity, and expression, and constitutes the philosophy behind Apsara’s wines.
 
After graduating from the University of Edinburgh, Robin rode his motorbike down to Provence, France, pursued a degree in Enology, and spent the next four years working with legendary winemakers worldwide, including Anne Claude Leflaive in Burgundy, Matt Wenk in the Barossa Valley, and Thomas Rivers Brown in the Napa Valley. The 2021 Sonoma Mountain Syrah is 100% Syrah, aged eight months in 30% New French oak and 70% once-used French oak, retaining varietal purity and vibrant aromatics while continuing a brand trademark with an Old World style.

The magnificently steep vineyards of Immortal Estate are among the steepest in California, planted on a dramatic 55-degree slope on the Mayacamas range. Winemaker Cabell Coursey works tirelessly to uncover and illuminate some of Napa and Sonoma’s lesser-known vineyards that are quietly yielding world-class grapes. He seeks out steep hillside plots that experience cool atmospheric conditions and have rocky soils that share similarities to the austere conditions of Bordeaux. These vineyards are capable of producing concentrated fruit with majestic characteristics that are unique to their origin. When I first tasted his 2016 West Slope Syrah last year, my immediate thought was, I’m getting a case of this for my cellar.
 
Coursey Graves Estate Vineyard is located a thousand feet above sea level on Bennett Mountain, where the ancient volcanic soils and unique micro-climate is ideally suited for Syrah. The wine is powerfully compelling, richly layered, and effortlessly elegant. 
 
Burgundy inspired winemaker Cabell Coursey, and he learned winemaking from the University of Burgundy in Dijon, France. 2016 Works and Days Pinot Noir Hill Justice Vineyard Sonoma CountyI often hear about a winemaker’s hands-off approach to winemaking, but one of many things that struck me about Cabell Coursey’s winemaking is his hands-on approach. He believes that the more time spent in the vineyard directly results in better wine. He also picks early and ferments longer, which is a technique that he learned in Burgundy, and it creates balanced wines with fruit, acidity, and tannin. Once you taste it, I’m confident that it’s a wine that you’ll want to enjoy a lot more of in the future. 

Inspired by Burgundy, Cabell learned winemaking from the University of Burgundy in Dijon, France. Then he honed his skills in New Zealand and the Willamette Valley before working at iconic producers DuMOL and Kosta Browne.
 
The Hill Justice Vineyard is perched at 1100 feet on Sonoma Mountain, and the rocky, red-soils are rich in clay and produce exceptional quality fruit. The Swiss clonal selection is rare in California but thrives in the extreme environment. If you love Pinot Noir, you should try this beauty before its days are done.
