Details Cabernet fuses superior talent, assiduous fruit selection, and rigorous science in creating their value-focused Cabernet. Their commitment to excellence and obsessive attention to detail paid off, resulting in an enchanting wine that tastes like it should be much more expensive. We were among the first to feature it last August, before any scores. Recently, Vinous reviewed it, alerting readers to this “ridiculous value.” At $33, it’s a wine everybody should try. 
 
Sourced from a hillside vineyard located on the Sonoma side of the Mayacamas Mountains, behind Oakville, this wine also incorporates fruit from Knights Valley, Alexander Valley, Dry Creek, and Chalk Hill for increased definition. Their team handpicks the fruit to precise analytics, equating to optimized flavors and aromas. 
 
Details is a new project by the owners of Sinegal, and Ryan Knoth makes the wines. Ryan gained valuable experience working under the tutelage of icons David Abreu, Michel Rolland, and Fredrik Johansson at Staglin Vineyards. He also worked with Jim Barbour and Philippe Melka at Gandona Estate.

William Knuttel produces wines with intensity and finesse, which he achieves through meticulous fruit selection and skilled winemaking. As the former VP and winemaker at Chalk Hill, he has relationships with some of Sonoma County’s most heralded growers. As a veteran winemaker, he allows each featured site to shine brightly under his namesake label. At just $40, his 2014 Windsor Oaks Vineyard Cabernet is deep, firm, and well-defined, showing off his learned skills as a top winemaker.
 
Knuttle’s 2014 Windsor Oak Vineyard Cabernet is sourced from a single block of vines overlooking the Russian River Valley to the West and the Alexander Valley and the Mayacamas Mountains to the East. He’s scrupulous in his selection of only the ripest and most flavorful berries for his single-vineyard bottling, and he vinifies them separately. 
 
The hillside vineyard is quintessentially Chalk Hill and planted over well-drained, gravelly, clay-loam soils with open exposure to brisk Russian River Valley breezes that allow the Cabernet to maintain balanced acidity and fine structure. He produced just 8 barrels of this wine, and after more than 4 years in the bottle, the wine is stunning.

Named for it’s unique volcanic soils composed of chalky white ash, the Chalk Hill AVA produces stunning wines, and in my mind, this one reigns supreme.  This wine makes absolutely no excuses at it’s $70 retail price…  A paragon of Northern Sonoma County, and especially when it comes to Bordeaux varietals, this towering, ostentatious effort from Chalk Hill Winery is brimming with super-concentrated dark berries, black chocolates, pipe tobacco, and creme de cassis. The 2015 has superb presence on the palate with great intensity, depth and balance.  Unsurprisingly, it’s already earned 94 Points from Robert Parker.
 
A fusion of nearly 60% Cabernet Sauvignon enhanced with Malbec, Petit Verdot and Merlot, the wine‘s deep, concentrated core is complex and extracted, carving out layers of vivid dark berries, black tea, sweet vanilla and cigar box.  After evolving for 20 months in oak and kept for over a year in the bottle, this compelling wine is drinking beautifully now and will cellar effortlessly for two decades…

Big, concentrated and full-bodied, the palate is jam-packed with black fruit preserves, framed by ripe, firm, grainy tannins and just enough freshness, finishing on a woody note. Forget it for 5-6 years and drink it over the next 20. 94 Points

Our biggest challenge is getting you to try wines like this…  In many cases they offer the greatest value.  In the case of Vellichor, our panel tasted this wine twice and on both occasions the wine provided a surreal sense of value and we knew we had to share it to you.


Arising from Chalk Hill, an area recognized for it’s unique micro-climate and volcanic, chalky, white ash soil, which furnishes fruit of remarkable power and delineated flavors so distinctive, the area was was established as an AVA in 1983. Aged for 18 months in oak, the 2015 shines bright with chocolate dusted cherries, wild raspberry, crème de cassis, graphite and of course, chalky undertones…   If you’re searching for a great bottle of Cab priced to be your daily drinker…this is it!
